At Kimchi Club W5, in order to guarantee the highest quality of our kimchi, we handmake our kimchi using only the freshest ingredients and prepare each cabbage leaf using the diamond cut method. This is a traditional and meticulous technique that no commercial kimchi brand uses (or even aware of this option) simply because it is time consuming.

Storage Tip:
In Korea, most households have a special "kimchi fridge," that is kept between -1°C to 2°C, replicating the natural underground conditions where kimchi pots were traditionally buried.
At UK homes, I recommend storing your kimchi in the coldest part of your fridge (mine is at the bottom shelf above the freezer at about 1°C - 3°C ).  Keeping it cold preserves freshness and helps the flavours to mature slowly over time.  People tend to get excited about bubbling kimchi jars, but kimchi often bubbles up when it's fermented too vigorously.  

 

Kimchi scientists say gut-healthy probiotics peak around 7-10 days after it’s made, but freshly made kimchi is already packed with so much healthy fibre and nutrients, so I would say enjoy it whenever you fancy!  Lots of people in Korea love the taste and crunchiness of freshly made kimchi. 

 

If you would like to try cooking with your kimchi, please leave it to mature for at least 3-4 weeks.  Why not order 1kg and have half fresh and keep the other half to mature. After a few weeks, you can make delicious kimchi stew, kimchi fried rice, kimchi cheese toasties, kimchi pancakes and more!

Delivery Details:

  • Your kimchi will be freshly prepared, safely packed within 2 days of dispatch.  What you receive will be perfectly timed to go in your fridge. 

  • To keep the cost of delivery low, we opted for soft packaging.  

  • As soon as you recieve your kimchi, please transfer it into a clean glass jar and store it in the coldest part of your fridge for 1–2 days before start consuming — this resting period allows the flavours to fully develop and kick start the fermentation process.  And kimchi tastes best when it is chilled cold.

    Flavours continue to develop over time—some people love it fresh, while others prefer the tangy, mature taste that develops after 1–2 months.

    Our cut cabbage kimchi will stay good to eat for about 3 months after the date it’s made.  If you still have some left close to 3 months old, making Kimchi Stew with it is a great way to enjoy the full flavours of kimchi in the form of hearty soup.
